Mom's Southern Potato Salad
Mom'S Southern Potato Salad is an moderately easy dinner. Made with 5 medium potatoes, 8 c. water, 1 tbsp. salt (optional), 6 hard-cooked eggs, cooled and peeled and 1 c. mayonnaise, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Place potatoes, water and salt in a large pan.
Bring to a boil.
Cook until fork-tender.
Refrigerate potatoes until cool; peel.
Chop potatoes and 5 eggs; reserve remaining egg for garnish. Combine sugar, salt, pepper, mustard, pickles, onion and mayonnaise in large bowl.
Quarter or slice reserved egg; garnish top of salad.
Sprinkle with paprika.
Makes 7 servings.
