Mom Mom's Blueberry Cake
Mom Mom'S Blueberry Cake is an moderately easy dinner. Made with 2 1/2 c. berries (fresh or frozen), 1 c. flour, 1 c. sugar, divided, 1/8 tsp. salt and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook berries with 1/2 cup water for 5 minutes over medium heat. Drain off juice, reserving 1 cup.
Set berries and juice aside. Mix flour, 1/2 cup sugar, salt, baking powder, butter and milk. Pour into greased 8 x 8-inch cake pan.
Add berries over batter. Add remaining 1/2 cup sugar over berries.
Pour 1 cup juice over everything.
Bake at 350Β° for 30 to 40 minutes.
