Mixed Vegetable Casserole
Mixed Vegetable Casserole is an moderately easy dinner. Made with broccoli, cauliflower, green beans, carrots and mushrooms or 2 pkg. frozen mixed vegetables, 2 eggs, beaten, 1 c. mayonnaise, 1 stick butter and 1 c. grated cheddar cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
For fresh vegetables, cook until tender. For frozen vegetables, cook as directed. Drain and put in bottom of large baking pan. In saucepan, mix soup, onion, cheese and mayonnaise; heat. Add beaten eggs to saucepan; mix. Pour over vegetables. Cover with buttered Ritz cracker crumbs.
Bake at 350Β° for 30 minutes.
