Miso Soup(Japanese Soup)
Miso Soup(Japanese Soup) is an impressive dinner. Made with 1/2 yellow onion, 1 large carrot, 1/2 burdock, 1 zucchini and 1/2 pkg. tofu, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Saute onion and garlic in sesame oil for 10 minutes.
Add a dash of ginger.
Cut up carrot, burdock and daiken and add to onion mixture.
Stir while cooking for 5 minutes.
Add 5 cups water and bring to a boil; slow boil for 7 or 8 minutes, then add 1 tablespoon miso.
Cut up zucchini and mushrooms (caps only) and add to mixture.
Simmer 8 minutes, then add the tofu and the other tablespoon of miso.
Add a dash of cayenne pepper; stir well and serve hot.
Serves 6.
