Miniature Fruit Cake
Miniature Fruit Cake is an moderately easy dinner. Made with 1 lb. chopped dates, 1 lb. broken nuts (walnuts), 1/2 lb. or medium jar red cherries, 1/2 lb. or medium jar green cherries and 2 sticks margarine, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mix flour, baking powder and salt.
Add to fruit and stir.
Pour melted margarine over mixture and stir.
Add nuts, egg yolks, sugar and vanilla; pour over mixture and stir.
Beat egg whites and fold into mixture.
Bake in miniature tins (set on cookie sheet).
Bake at 325Β° for 20 minutes.
