Minestrone Soup
Minestrone Soup is an impressive dinner. Made with 2 qts. homemade beef stock, 1 large onion, chopped, 1 clove garlic, minced, 3 stalks celery with leaves, chopped and 1 cup diced carrots, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Remove meat from bones used in making stock and add to stock.
Saute in 2 Tbsp. oil: onion, garlic clove, celery stalks, carrot, raw potato, and zucchini.
Stir until veggies glisten.
Add stock along with: kidney beans, can of tomatoes, and tomato sauce.
Simmer 30 minutes stirring often.
Add 1/2 cup uncooked spaghetti broken into 1 inch pieces.
Add salt, pepper, chili powder, oregano, and parsley.
Simmer 20 minutes.
