Minestrone Soup
Minestrone Soup is an impressive dinner. Made with 1/2 lb. extra lean ground beef, 1 onion, diced, 2 (15 oz.) cans tomatoes, 2 c. chopped swiss chard and 2 c. beef broth, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Do not drain tomatoes or beans.
In Dutch oven, brown meat and onion; add tomatoes and Swiss chard; cover and simmer 10 minutes. Add broth, beans, water, macaroni (dry), Italian seasoning and salt.
Cover and simmer until macaroni is tender.
Serve with Parmesan cheese sprinkled on top.
