Mike's Pork Medallions Dijon
Mike'S Pork Medallions Dijon is an easy dinner. Made with 6 pork medallions or pork chops, 1/4 c. dijon mustard, 1/4 c. preserves (apricot, peach or currant), 1 tbsp. balsamic vinegar and 1 can sliced peaches, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In frying pan, brown pork in vegetable oil or margarine. Remove to a shallow baking pan.
Into frying pan, mix mustard, preserves and vinegar.
Simmer over low heat for 1 minute.
Pour over chops.
Bake chops for 35 minutes, uncovered, at 325Β°.
Serve with sliced peaches, arranged on platter.
