Microwave Strawberry-Rhubarb Jam
Microwave Strawberry-Rhubarb Jam is an easy dinner. Made with 2 1/2 c. rhubarb, 2 1/2 c. strawberries, 1 (3 1/2 tbsp.) pkg. powdered fruit pectin and 3 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Slice rhubarb into 1/2-inch slices.
Hull and slice strawberries.
Combine rhubarb, strawberries and pectin in a 3-quart casserole dish.
Cover loosely.
Microwave on High for 8 to 10 minutes or until full boil.
Stir occasionally.
Stir in sugar until dissolved.
Cover and microwave on High 8 to 10 minutes or to a full boil.
Uncover and microwave on High 1 to 2 minutes until mixture sheets from spoon.
Skim off foam.
Let stand 5 minutes.
Pour into hot jars.
Makes three (8-ounce) jars.
