Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 1/2 c. sugar, 1/2 c. corn syrup, dash of salt, 2 c. raw peanuts and 1/2 c. water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Put sugar, corn syrup, water, salt and peanuts into a 2-quart microwave measuring cup.
Do not cover.
Cook on High for 5 minutes. Stir.
Cook on High for 13 to 15 minutes, until hard crack stage (300Β° on the candy thermometer).
Check temperature several times during the last few minutes.
Do not leave thermometer in microwave.
Stir in butter, soda and vanilla until light and bubbly.
Pour onto buttered cookie sheet.
Spread. Cool.
Break into pieces.
