Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. light corn syrup, 1 c. roasted, salted peanuts, 1 tsp. butter or margarine and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Lightly butter a 15 1/2 x 10 1/2-inch baking sheet with raised sides; set aside.
In a 2-quart bowl, combine sugar and syrup. Cook on High for 6 to 8 minutes or until syrup turns a light brown color.
Stir in peanuts, butter or margarine and vanilla until blended.
Cook on High for 1 minute.
Place bowl on hot pad. Syrup will be very hot.
Gently stir in baking soda until mixture is light and foamy.
Pour evenly onto prepared baking sheet; let cool 30 to 60 minutes.
When cool, break into small pieces.
Store in airtight container.
Makes about 1 pound
