Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1/8 tsp. salt, 1 c. raw peanuts, 1 c. sugar, 1/2 c. karo syrup and 1 tsp. butter or margarine, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Stir together nuts, sugar, Karo and salt in 1 1/2-quart casserole dish.
Place in microwave and cook on High for 7 to 8 minutes, stirring after 4 minutes.
Add butter and vanilla to syrup, blending well.
Return to microwave and cook 1 to 2 minutes.
Peanuts will be lightly browned and syrup very hot.
Add baking soda and gently stir until light and foamy.
Pour onto lightly greased cookie sheet.
Cool for 30 to 60 minutes.
When cool, break into pieces.
