Microwave Lasagna
Microwave Lasagna is an moderately easy dinner. Made with 1 lb. very lean ground beef or you can use italian sausage or 1/2 lb. beef and 1/2 lb. sausage, 1 (8 oz.) pkg. uncooked lasagna, 1 (32 oz.) jar spicy spaghetti sauce, 1 tsp. salt and 2 c. ricotta cheese or small curd cottage cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a 2-quart casserole, crumble up the beef and microwave for 5 to 6 minutes on High until the meat is no longer pink.
Drain off all fat and add the spaghetti sauce, water and salt.
Mix and again microwave on High for 5 to 6 minutes.
In 9 x 13-inch glass baking dish, layer 1/3 of the sauce, 1/2 of the uncooked lasagna, 1 cup grated Ricotta cheese (or the small curd cottage cheese) and 1/3 of the shredded Mozzarella cheese.
Repeat the layers ending with the sauce.
Sprinkle on the Parmesan cheese.
Cover with plastic wrap and microwave on High for 30 to 35 minutes.
Remove and let stand for 5 minutes.
Serves 6 to 8 people.
