Microwave Ground Beef Stroganoff
Microwave Ground Beef Stroganoff is an moderately easy dinner. Made with 1 lb. lean ground beef, 1 small onion, chopped, 1 clove garlic, minced, 1 can cream of chicken soup and 1 (8 oz.) can mushroom stems and pieces, drained, this recipe delivers authentic, satisfying flavors. Place ground beef in a 2-quart microwave casserole; break up with fork.
Stir in onion and garlic.
Cover and cook on High 5 to 6 minutes, or until beef is no longer red and onion is transparent; drain.
Stir in soup, mushrooms, tomato paste, salt and pepper.
Cover and cook on High 7 to 8 minutes, stirring once. Stir in sour cream.
Cook on 60 for 1 minute.
Sprinkle with parsley.
Serve over rice or noodles.
