Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 1 1/2 c. uncooked rice (not instant), 2 tbsp. cooking oil, 2 c. chicken broth, 1/4 tsp. garlic powder and frozen corn, thawed or 1 small can whole kernel corn, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a large pan saute rice and onion for a few minutes, stirring constantly.
Add tomato sauce, chicken broth and spices.
Heat to boiling, then reduce heat to simmer.
Cover and simmer for 25 minutes or until rice is tender and fluffy.
Stir in corn and green onions and heat.
Makes 4 or 5 servings.
