Mexican Rabbit
Mexican Rabbit is an moderately easy dinner. Made with 1 large rabbit, 1 can ro-tel tomatoes/chilies, 1 can cream of chicken soup, 1 can cream of mushroom soup and 1/2 lb. velveeta cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil rabbit in salted water; bone and place in bottom of baking dish (13 x 9-inch).
Chop onion over rabbit.
Slice the cheese thin and place over onion; sprinkle 1/2 package Doritos over cheese.
Pour soups over all (no water); pour tomatoes/chilies over soups.
Top with rest of crushed Doritos. Bake for 45 minutes at 350Β°.
