Mexican Meat Loaf
Mexican Meat Loaf is an moderately easy dinner. Made with 2 lb. ground beef, 16 oz. jar thick and chunky salsa (choice of mild, medium or hot), 2 eggs, 2 c. bread crumbs and salt and pepper (optional), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a medium mixing bowl, combine ground beef, 1/2 jar salsa, eggs and bread crumbs.
Season.
If adding cheese, do so now. Press into loaf pan.
Pour remaining salsa on top.
Bake to 350Β° for 1 to 1 1/2 hours.
