Mexican Fudge(Appetizer)
Mexican Fudge(Appetizer) is an easy dinner. Made with 1/2 lb. grated cheddar cheese, 1/2 lb. grated monterey jack cheese, 3 eggs, 1/2 c. green taco or enchilada sauce and corn chips or nachos, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine cheeses; spread 1/2 in the bottom of a 9 x 9-inch baking pan.
Beat the eggs; mix with taco or enchilada sauce. Pour egg mixture over cheese.
Spread remaining cheese on top; bake in a 350Β° oven for 30 minutes, or until eggs are set and cheese is golden.
Remove from oven; cool slightly so eggs and cheese are firm enough to slice.
Cut into 1-inch squares; serve squares on corn chips as appetizers.
Can be served as a main dish by cutting into 4 to 6-inch squares and eliminating corn chips. Makes 81 appetizer servings.
