Mexican Cornbread Skillet
Mexican Cornbread Skillet is an moderately easy dinner. Made with 2 eggs, slightly beaten, 1 c. yellow corn meal, 2 tsp. soda, 1 (17 oz.) creamed corn and 1 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine eggs, corn meal, soda, salt, corn, milk and oil in a bowl and set aside.
Saute ground beef; drain and set aside.
Pour half of corn bread mixture into a greased 10 1/2-inch skillet. Sprinkle evenly with beef, cheese, onions and peppers.
Pour remaining corn meal mixture over this.
Bake at 350° for 45 to 50 minutes.
Let stand 5 minutes before serving.
Serves 6 to 8.
