Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 c. yellow cornmeal, 2 eggs, 1 c. milk, 3/4 tsp. salt and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Brown ground meat.
Grease and heat large skillet.
Sprinkle very thin layer of cornmeal in skillet and let brown slightly. Pour 1/2 the batter in skillet.
Sprinkle cheese evenly over batter, then the meat, onion and peppers.
Pour remaining batter on top.
Bake 45 to 50 minutes at 350° or until brown.
