Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 1/2 c. meal, 1/2 c. flour, salt and pepper, 2 eggs and 1 (16 oz.) can cream-style corn, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oil in an iron skillet until hot.
Mix remaining ingredients except the cheese.
Pour half the batter in iron skillet.
Sprinkle 1 cup of cheese on top of batter.
Pour remainder of batter on top of cheese.
Sprinkle remainder of cheese in middle of batter.
If sprinkled on edges cheese will burn.
Bake at 350° for 30 to 35 minutes.
