Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 4 eggs, 1 large can creamed corn, 1 large onion, chopped, 3/4 c. oil and 2 to 2 1/2 c. self-rising corn meal, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mix eggs, corn, oil, onion, chilies and corn meal.
Add enough water to make the batter thin enough to spread in a 9 x 13-inch baking pan that has been greased and floured.
Pour 1/2 of the batter in the pan and then place the 6 slices of cheese on the batter.
Pour the remaining mixture to cover the cheese completely.
Cook at 375Β° until golden brown.
