Mexican Chicken Stew
Mexican Chicken Stew is an impressive dinner. Made with 1 tbsp. olive oil, 1 lb. boneless, skinless chicken breasts, cubed, 1 c. chicken broth, 1 (4 oz.) can chopped green chilies, undrained and 1 1/2 tsp. garlic powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Heat oil in a large skillet over medium-high heat.
Add chicken and cook 5 minutes, stirring often. Remove chicken from skillet and set aside.
Add remaining ingredients, except onions; mix well.
Bring to boiling, reduce heat to medium and cook 10 minutes. Stir in cooked chicken and onion. Simmer 5 to 10 minutes. Serves 6.
