Mexican Chicken Casserole
Mexican Chicken Casserole is an moderately easy dinner. Made with 3/4 c. hot water, 2 tbsp. butter, cut into pieces, 2 c. stove top chicken or cornbread stuffing mix, 3/4 c. mild salsa, divided and 4 boneless chicken breasts, this recipe delivers authentic, satisfying flavors. Mix water and butter in an 8 x 12-inch baking dish until butter is melted.
Stir in stuffing mix and 1/4 cup salsa. Arrange chicken over stuffing.
Pour remaining salsa over chicken. Cover dish with foil; bake for 30 minutes, or until chicken is done.
Remove foil.
Sprinkle with cheese.
Bake for 5 minutes, until cheese is melted.
