Mexican-Chicken Casserole
Mexican-Chicken Casserole is an moderately easy dinner. Made with 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 1/2 c. chicken broth, 1 large onion, chopped and 1/2 c. diced celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine cream of mushroom and chicken soup, chicken broth, onion, celery, bell pepper, tomatoes and chilies, 1 cup cheese, chicken, salt and pepper.
Line greased 3-quart baking dish with tortilla chips.
Pour mixture over chips.
Top with remaining 1/2 cup grated cheese.
Bake at 325Β° for about 35 to 40 minutes or until cheese is bubbly but not brown.
