Mexican Chicken Casserole
Mexican Chicken Casserole is an moderately easy dinner. Made with 4 c. corn chips (tortilla style), 2 tbsp. vegetable oil, 1 c. chopped onion, 1 can cream of chicken soup and 2/3 c. tomatoes with chiles, this recipe delivers authentic, satisfying flavors. Saute onion in oil.
Add soup, tomatoes and chicken broth. Simmer 5 minutes.
In casserole, layer 1/2 chicken, 1/2 chips, 1/2 sauce and 1/2 cheese.
Repeat.
