Mexican Chicken Casserole
Mexican Chicken Casserole is an moderately easy dinner. Made with 4 chicken breasts, 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 can chicken broth and 1 can ro-tel, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Boil chicken breasts until done.
Pull cooked chicken apart and off the bone.
Place in bottom of casserole dish.
Crush bag of Doritos and put on top of chicken.
In large saucepan, blend the two soups, broth, Velveeta and Ro-Tel.
Heat until cheese is melted.
Pour over Doritos.
Bake 20 minutes at 350Β° in 9 x 13-inch pan.
Serves 4 to 6.
