Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 1 boiled chicken, 1 pkg. tortillas, 1 can chicken soup, 1 can cream of mushroom soup and 1 can ro-tel (tomatoes and chilies), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Remove bones from chicken and set aside.
Mix soups, Ro-Tel, pepper and onion.
Break tortillas in bite-size pieces.
In the bottom of an oblong, greased pan, put a layer of tortillas, then a layer of chicken, then a layer of mixture.
Continue the layers until all are used.
Cover with cheese and bake 45 minutes at 350Β°.
