Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 1 large bell pepper, chopped, 1 large onion, chopped, 1 can cream of mushroom soup and 1 can cream of celery soup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown ground beef, bell pepper and onion together.
Drain and add soups, can of milk and enchilada sauce until creamy.
In a large pan, tear tortillas in quarters, making a layer in bottom of pan.
Add half of meat sauce on top, then Velveeta cheese.
Make 2 layers of tortillas, meat sauce and cheese.
Bake at 350Β° for 30 to 40 minutes.
