Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1 large onion, chopped, 1/4 tsp. salt, 1 (1 lb.) can chili and 1 (10 oz.) can tomato soup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown ground beef in skillet.
Simmer until done.
Add chopped onion and salt.
Add chili to tomato soup; simmer while stirring. Mixture should be consistency of gravy.
If dry, add small amount of water.
Line large casserole with 1/2 of the corn chips.
Pour in the meat mixture and add remaining chips on top.
Sprinkle with cheese and catsup.
Bake in 400Β° oven until cheese is melted. Serve hot.
