Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 1 medium onion, 2 cans ranch style beans, 2 cans cream of chicken soup and 2 cans ro-tel tomatoes, diced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Brown beef and drain.
Mix onion and garlic and saute.
In a 9 x 13-inch baking dish, layer corn tortillas, half of ground beef, 1 can beans, 1 can black olives and 6 slices cheese.
Repeat layers again.
Mix soup and Ro-Tel in bowl.
Pour over casserole and bake 45 minutes to 1 hour at 350Β°.
