Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1/2 lb. ground beef, 1/2 c. onion, chopped, 6 or 8 flour tortillas, 1 can ranch style beans and 1 can ro-tel tomatoes, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Brown ground beef and onion; drain.
Season to taste.
Combine beans, tomatoes and soup.
Line a greased ovenproof dish (2-quart) with tortillas.
Layer half of ground beef, soup mixture and cheese.
Add another layer of tortillas, meat and soup mixture, ending with grated cheese.
Bake at 350Β° for 20 to 30 minutes or until heated through and cheese is melted.
