Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 1/2 lb. ground beef, 1 medium onion, 1/2 c. milk, 1 (10 oz.) can enchilada sauce (old el paso) and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown meat and onions.
Add your soups, milk, enchilada sauce and chopped green peppers to meat and simmer for about 10 minutes.
In a greased (Pam spray) pan, add ingredients as below: Layer of meat mixture, layer of crumbled Doritos and layer of grated cheese, repeating layers until all material is used.
Bake at 350Β° in oven for about 30 minutes or until cheese is melted.
All or parts of the casserole can be frozen.
