Mexicali Chicken
Mexicali Chicken is an moderately easy dinner. Made with 2 1/2 to 3 lb. cut up fryer, 2 tbsp. butter, 1/2 c. onion, chopped, 1 garlic clove, minced and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In skillet, brown chicken in butter; remove chicken.
Add onion and garlic to skillet; cook until lightly browned.
Add remaining ingredients except green pepper.
Return chicken to skillet and spoon sauce over all.
Cover; simmer 30 minutes.
Add green pepper and cook 10 minutes more.
Serve with rice.
