Mexicali Casserole
Mexicali Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1 (1 1/4 oz.) pkg. taco seasoning, 1 (14 1/2 oz.) can whole tomatoes, chopped and undrained, 1 (8 1/2 oz.) can whole kernel corn, drained and 1 egg, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 400°.
Grease a shallow 2-quart baking dish. Brown ground beef in a large skillet; drain.
Return to skillet; add taco seasoning, tomatoes and corn.
Bring mixture to a boil over medium heat, stirring occasionally.
Pour mixture into a baking dish.
Cover with cheese.
Mix egg, milk and cornbread mix. Pour over mixture.
Bake at 400° for 25 to 30 minutes or until golden brown.
Cool 10 minutes before serving.
