Melon Mousse
Melon Mousse is an moderately easy dinner. Made with 3 c. cubes honeydew or cantaloupe, 1/3 c. apple juice, 3 envelopes unflavored gelatin, 1 tbsp. sugar and 1 1/2 c. nonfat yogurt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In food processor, process melon until smooth.
In medium saucepan, combine gelatin, sugar and 1/3 cup of apple juice. Cook, stirring until mixture boils and gelatin and sugar are dissolved.
Remove from heat.
Stir in melon mixture.
Add yogurt and mint and mix well.
Pour into 4-cup mold or 4 ounce custard cups.
Refrigerate until set.
