Mediterranean Scallops
Mediterranean Scallops is an moderately easy dinner. Made with 1 large red pepper, 2 tbsp. olive oil, 1 tbsp. chopped garlic, 6 small plum tomatoes, cut in wedges and 6 large green olives, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut pepper in julienne strips. In hot oil, cook garlic briefly.
Add pepper, tomatoes, olives, capers and thyme.
Cook 5 minutes.
Melt butter; add scallops and cook about 3 minutes. Sprinkle lemon juice and basil over and stir briefly.
Spoon tomato mixture on heated plates with scallops over mixture.
Serves 4.
