9-inch pie pan, stir together vegetable oil and potatoes. Press evenly into pie crust shape.

Bake at 425° for 15 minutes, until just beginning to brown.

Remove from oven.

Layer on grated cheese and chicken.

Bowl, beat together milk, eggs, salt and pepper.

Pour egg mixture onto other ingredients. Sprinkle with 1 tablespoon parsley flakes.

Return to oven and bake at 425° for 30 minutes, until lightly browned.

Allow to cool 5 minutes before cutting into wedges.
