Marinated Potato Salad
Marinated Potato Salad is an moderately easy dinner. Made with 2 1/2 lb. potatoes, 1/3 c. cider vinegar, 1/4 c. corn oil, 2 tbsp. sugar and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook potatoes until tender.
Meanwhile, beat together vinegar, corn oil, sugar, salt and pepper and set aside.
Slice potatoes and put into large bowl.
Add egg, onion and parsley and toss lightly.
Immediately pour oil mixture over potatoes but do not toss.
Let marinate 1 hour.
Add mayonnaise and toss lightly. Makes 6 to 8 servings.
