Marinated Mushrooms
Marinated Mushrooms is an moderately easy dinner. Made with 1 lb. fresh mushrooms, 1 small onion, sliced in rings, 1/3 c. red wine vinegar, 1/3 c. salad oil and 1 tbsp. mustard, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Steam the mushrooms for 1 minute.
In a saucepan combine all other ingredients and bring to a boil.
Simmer, uncovered, for a few minutes.
Place mushrooms in a glass or ceramic bowl and add the marinade.
Let marinate in the refrigerator at least 24 hours. Serve with a toothpick.
