Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, sliced, 1 medium-size onion, chopped, 1/2 green pepper, diced, 1 (10 1/2 oz.) can tomato soup (undiluted) and 1/2 c. vinegar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook carrots until tender in small amount of water; drain. Combine carrots, onion and green pepper; set aside.
Combine soup, vinegar, salad oil, sugar and mustard.
Stir until well mixed. Pour over vegetables.
Toss lightly with a fork.
Refrigerate overnight.
Yields 8 servings.
