Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, 1 tsp. salt, 1/2 tsp. pepper, 1 c. white sugar and 1 can tomato soup, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Slice carrots and cook until slightly crisp.
Do not overcook. Cool.
Put salt, pepper, sugar, tomato soup, oil and vinegar in mixer and beat 5 minutes.
Pour over carrots.
Add onion and green pepper sliced paper thin.
Marinate overnight.
Store in glass jar in refrigerator.
Keeps 2 weeks or more.
When carrots are gone, use the liquid on salads.
