Marinated Carrot Salad
Marinated Carrot Salad is an moderately easy dinner. Made with 2 lb. carrots, 1 or 2 medium onions, 1 or 2 bell peppers, 1 can cream of tomato soup and 1/2 c. vinegar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Scrape and dice carrots.
Cook until just tender in slightly salted water.
Drain and cool.
Slice onions and peppers.
Layer with carrots in a glass bowl.
Mix soup, vinegar, oil and sugar. Beat well.
Pour over carrots.
Cover bowl and refrigerate.
Let marinate at least 24 hours.
