Mandarin Salad
Mandarin Salad is an moderately easy dinner. Made with 1/4 c. sliced almonds, 1 tbsp. plus 1 tsp. sugar, 1/4 head lettuce, torn into bite sizes, 2 medium stalks celery and 1/4 c. romaine lettuce (for texture), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook almonds (low heat) with sugar, stirring constantly, until sugar melts and almonds are coated (use wooden spoon).
Cool on wax paper; pull apart.
Store at room temperature.
Place lettuce, romaine, celery and onions in plastic bag.
Pour dressing in bag. Add oranges.
Close tightly and shake until well coated.
Add almonds and shake.
Makes 4 to 6 servings.
