Mama's Pineapple Skillet Cake

Beat egg whites.
To beaten egg yolks, add sugar, then pineapple juice and dry ingredients alternately. Add vanilla. Fold in stiffly beaten egg whites.
Pour into large cast-iron skillet lined with melted butter, brown sugar and pineapple slices.
Bake at 350Β° for 30 minutes or until toothpick comes out clean in the middle. This can be doubled and baked in a 9 x 13-inch cake pan; will have to bake a little longer.
