Made with 1 1/2 lb. cooked chicken breasts, chopped, 1/4 (8 oz.) pkg. neufchatel cheese, softened, 1 tbsp. reduced calorie mayonnaise, 1 tbsp. grated onion and 1 tbsp. sweet pickle juice, this recipe delivers authentic, satisfying flavors. Combine cheese and mayonnaise, beating until smooth.
Add onion, pickle juice, celery, curry powder, salt, pepper, pimento, hot sauce and garlic powder; mix well.
Stir in chicken and 2 tablespoons broth.
Coat a 2-cup mold with nonstick cooking spray. Pour chicken mixture into prepared mold and chill.
Unmold onto serving plate; serve with Melba toast and raw vegetables.
