Linda'S Stuffed Potatoes(Patata Ripeni Di Linda) is an moderately easy dinner. Preheat
Wash, scrub and dry potatoes. Bake potatoes for 40 to 50 minutes.
Remove from oven and let cool. Cut potatoes half and scoop out center, leaving a 1/4-inch shell on potato.
Combine scooped out potato and the rest of the ingredients and mix well by hand.
Fill the cavity of the potatoes with filling, dividing evenly.
Sprinkle with paprika and bake for 20 to 30 minutes, until heated thoroughly.
