Lime-Pineapple Parfait Pie
Lime-Pineapple Parfait Pie is an easy dinner. Made with 1 c. pineapple juice, drained from 1 large can of crushed pineapple, 1 (3 oz.) pkg. lime flavored gelatin and 1 pt. vanilla ice cream, cut into pieces, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat pineapple juice to boiling in a 2-quart saucepan.
Remove from heat.
Add gelatin.
Stir until dissolved.
Add vanilla ice cream to hot liquid.
Stir immediately until melted.
Chill, until mixture is thickened, but not set, 20 to 25 minutes.
Fold in drained pineapple.
Turn into cooled, baked 9-inch pie shell. Chill until firm, at least 2 hours.
