Light Style Chicken Mexicana
Light Style Chicken Mexicana is an moderately easy dinner. Made with 4 chicken breasts (boneless and skinless), 1/4 tsp. garlic salt, 1/2 c. chopped green onions, 3/4 c. picante sauce and 2 c. hot, cooked rice, this recipe delivers authentic, satisfying flavors. Sprinkle chicken with garlic salt.
Heat margarine in nonstick skillet over medium heat.
Add chicken; cook 5 minutes.
Turn chicken over.
Add onions and green pepper around edges of chicken.
Cook 5 minutes or until chicken is tender.
Place rice on serving platter.
Remove from skillet and place over rice. Keep warm.
Add picante sauce and cheese to skillet.
Cook and stir until cheese is melted and sauce is hot.
Pour over chicken and rice.
