Light Cornbread
Light Cornbread is an moderately easy dinner. Made with 2 c. plain corn meal, 1 1/2 c. self-rising flour, 1 tbsp. baking powder, 1 tbsp. salt and 1/4 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 425°.
Mix all dry ingredients.
Add milk and eggs.
Melt 1/4 cup margarine and 1/4 cup cooking oil in a 9 x 13-inch pan.
Pour half of oil mixture in batter; leave rest in pan.
Pour batter in pan and use a spoon to spoon excess oil on top of batter.
This forms a thick crust.
Bake at 425° for 40 to 45 minutes.
